Most counters report 0.3, 0.5, 1.0, and 5.0 micron channels; the tightest ISO classes (Class 1-4) require 0.1 and 0.2 micron channels as well. Match the channel set to the ISO class you’re actually testing to.
Do I need isokinetic sampling probes?

Yes, in unidirectional (laminar) airflow areas — the probe intake velocity has to match the room’s airflow velocity or the count will be skewed. They’re generally not required in non-unidirectional (turbulent) flow rooms.
Can one particle counter do both classification and continuous monitoring?

Generally no. Portable units aren’t built for unattended 24/7 fixed sampling, and remote/networked systems aren’t built to be walked room to room — most regulated facilities own both equipment categories for different parts of their monitoring program.
